PURCELLVILLE — The East Main Street spot locals have known for more than a decade as Velocity Wings has reopened under a new name and a new identity. Now operating as Velocity Bar and Kitchen, the restaurant is shedding its sports-bar persona in favor of what its team describes as a casual dining experience built around families.
The Purcellville location has been open for less than a week, and staff say they are still working through the early days of the transition before launching any mainstream advertising.
“The idea is to move away from being just a guys’ wing spot,” a Velocity Bar and Kitchen representative told Purcellville News, describing a concept meant to draw families and sit-down diners rather than a game-day crowd.
A Fresher, Fuller Menu
The most significant change is on the plate. According to the restaurant, the kitchen has moved away from frozen bar food toward fresh, homemade dishes, with sauces and ribs now made daily on-site. The new menu reaches well beyond wings into full sit-down territory, anchored by entrées such as a 12-ounce grilled ribeye, miso-glazed salmon, an apple-cider-brined pork chop, and half- and full-rack baby back ribs. Southern comfort dishes round out the mains, including fish and chips, southern fried chicken, and “Warren’s Fine Fried Chicken & Waffles” — a nod to Thompson Hospitality founder Warren Thompson.
Wings haven’t disappeared. The restaurant still offers boneless, traditional, and its signature hand-breaded “Velocity Wings,” available in sauces and dry rubs from mild buffalo to Old Bay. The boneless wings are billed as free-range and sourced from local Virginia farms.
The format also leans into a fuller bar-and-restaurant experience. A two-hour, family-style unlimited brunch runs Saturdays and Sundays from 10 a.m. to 3 p.m. ($32 per person, $15 for kids 10 and under), and a weekday express lunch promises any two courses in 10 minutes or less for $14.99. Happy hour runs Monday through Friday from 3 to 6 p.m. with $6 bites and discounted drinks, and a rotating slate of weekly specials includes all-you-can-eat ribs on Mondays, Taco Tuesdays, all-you-can-eat wings on Wednesdays, and a Thursday surf and turf. A full cocktail list, mimosas, and house Velo IPA and lager are also on the menu.

A Different Owner, a Separate Brand
The rebrand traces back to a change in ownership. The Velocity Wings name was originally built by Jim Speros, a longtime Northern Virginia restaurateur and former football executive who founded the brand in Purcellville in 2013 and expanded it across the region. Speros’ Velocity Restaurant and Hospitality Group entered a partnership with Reston-based Thompson Hospitality at the end of 2022.
Thompson Hospitality — founded by Warren Thompson in 1992 and one of the largest minority-owned food-service companies in the country — now operates a portfolio of roughly 15 restaurant brands, including Matchbox, Big Buns Damn Good Burgers, Milk & Honey and Wiseguy Pizza. The company is now revamping the Velocity locations it operates, converting them to the Velocity Bar and Kitchen concept.
According to the restaurant, some original Velocity Wings locations still run by Speros remain separate from the new brand direction, meaning diners across the region may continue to encounter both names for now.
